Paella, a specialty in Spain, is a rice dish cooked with saffron and olive oil in a shallow pan. You can make it with almost anything–seafood, chicken, sausage, vegetables, or any combination of these items. One of the best seafood paellas I have ever had was at El Caldero in Madrid, Spain. The rice was perfectly cooked, and the portion was large (one paella made 2 plates like this).
